  1. Step 1: Put the cottage cheese, flour, lemon zest, vanilla packet and the pinch of salt into one bowl and mix. This will form a dough which should have a sticky consistency.
  2. Step 2: Let it all rest at room temperature for half an hour.
  3. Step 3: Form the dough rings and balls by dusting your hands with flour and then moulding each shape by hand.
  4. Step 4: Put enough oil in the shallow pan and let it come to a high temperature.
  5. Step 5: Drop the rings first in the oil. Fry for two minutes on each side, until they become golden brown. Take out of the pan and place them on a plate which is covered with kitchen towel to absorb any addtional oil.
  6. Step 6: Repeat step five with the balls.
  7. Step 7: Serve hot, two on a plate, covered with sour cream, sour cherry jam and icing sugar.
